I'm a massive fan of Iron Chef Japan, back when it was still on. Iron Chef America is usually more "entertainment" than anything. I still find it dope to watch, don't get me wrong.. but when they do shit like Rachel Ray Vs. Giada De Laurentiis it just pisses me off. A lot of chefs take that show very seriously, almost religiously (Japan). At Lucien, chef use to have pictures of the Iron Chefs in our kitchen... like a tribute, like they were always watching over us. It was a cool reminder of "time" and also "quality"... The pictures sat right underneath the clock.

Oh, and I remember reading about the White House chef, Cristeta Comerford, a couple years back when she took over as Chef of the White House. To get a position like that takes a tremendous amount of work..

That should really be in the "List of Common Misconceptions" thing on Wikipedia. Emeril built, and got his empire for a reason. Wikipedia him... he definitely had a impressive career. PLUS, as most food writers, and ex-chefs now current food writers who detest his TV personality, but do say that his restaurants are incredible. I have a few friends who have eaten at a couple of his restaurants that say the exact same thing.
And that whole personality thing could be said just as much for Bobby Flay. Ever watch any of his TV shows?

I have a crush on Bobby Flay! But I also lived in New. Orleans so I know Emeril is a god. I don't watch the new Iron Chef stuff but the original was the best. My friends and I were heavily obsessed with it. I totally forgot thb was on tonight. Gotta go see if I can still catch it.

It's pretty much in the nature of a chef to be an "asshole". It's not like this "act" that everyone assumes it is. And it's not like all these fucking blog writers talk about, with people like Gordon Ramsey. People really just don't get the idea of that is how a kitchen works. The kitchen is set up directly off the structure of the military.
People have this loss of passion in my mind (not everyone, obviously, but there are very few people I have met as passionate about what they do for a living, than most chefs are). People don't understand that everything has to be perfect. Perfection, perfection, perfection. That is what our entire life consists of. Of course that leads to screaming, and dismantling ego's on an hourly/minutely basis. That's how people get better.
Most chef's I know would rather inflict serious harm to themselves (or someone else for that matter), before knowingly sending out a dish that isn't perfect. This leads to yelling. So I wouldn't really say that they're assholes.. they're just passionate.
